Makes 12 servings

Ingredients

Dough
1 cup water
1/2 cup butter
1/8 teaspoon salt
1 cup all-purpose flour
4 eggs

Orange Cream
1 8-ounce package reduced-fat cream cheese (Neufchâtel), softened
1/3 cup powdered sugar, plus more for dusting
2 teaspoons orange zest
1/4 cup orange juice
1 11-ounce can mandarin orange segments, drained

How to Make It

Dough

  1. Preheat oven to 400°F. Grease a large baking sheet. In a medium saucepan, combine the water, butter, and salt. Bring to boiling. Immediately add flour all at once; stir vigorously. Cook and stir until mixture forms a ball. Cool 10 minutes. Add eggs, one at a time, beating well after each addition.
  2. Drop 12 heaping tablespoons of dough onto prepared baking sheet. Bake 30 to 35 minutes, or until golden and firm. Transfer to a wire rack; cool.

Orange Cream

  1. In a medium mixing bowl, beat together cream cheese, powdered sugar, orange zest, and orange juice until light and fluffy.
  2. Before serving, cut tops from cream puffs; remove soft dough from inside. Fill with the Orange Cream and mandarin orange sections. Dust with powdered sugar, if desired.
