Elizabeth Shaw (or Liz) is a nationally known nutrition expert, four-time cookbook author and freelance writer, and early nutrition pioneer in the field of fertility nutrition. Commonly
referred to as "Shaw Simple Swaps", she is the president and owner of the USA-based nutrition communications and consulting firm. Elizabeth has been in the field of nutrition for over 18 years, has served as an adjunct professor, and is a certified personal trainer.
Her early career began working in the clinical nutrition field, in which she worked in eating disorders, food-service, and education. Through these experiences, she learned valuable communication skills that set-the-stage for her entrepreneurial endeavors. In 2012, she started her company and began writing and speaking on the side. After years of hard-work, in 2017, she pursued her side hustle and turned it into her full-time business. Along the way, she also found herself struggling with her own nutrition, particularly when it came to expanding her family and fertility struggles. Given the lack of nutrition content available back in 2015 in this area, she began to work feverishly alongside colleagues on expanding the information for other women and men in this stage of life. Her first two titles, the Fertility Foods Cookbook and the Stress-Free IVF Nutrition Guide, were born during this time.
Now, a fan of modern appliances and a busy mom of two, she is in favor of cooking with convenience and health in mind. This passion led her to explore the help of kitchen staples, like the Instant Pot and Air Fryer, to save time while putting nutritious meals on the table. Her love of playing in the kitchen with these two appliances helped birth her second two book babies, The Instant Pot Cookbook For Dummies and The Air Fryer Cookbook For Dummies.

What she loves most about her dynamic job is that she gets to connect with individuals in various disciplines striving to improve the global food supply to elicit change for the good.
